Today I smoked some St. Louis Style Ribs for my Granddaughter. She loves my ribs. It had been awhile since I had smoked her some ribs. For lunch today we had the ribs, some homemade mac and cheese and baby red potatoes.
I still had plenty of fire from the rib cook so I put together a smoked fatty. I have smoked several fatties before but this is the first time I wrapped one with bacon. I also didn’t use as much rub as I have in the past.
The results were fantastic. The rub I used was a Smoked Maple Rub and the sausage was Jimmy Dean’s Maple flavored sausage. With the maple sausage and the maple rub I was a little concerned it would be too much of a maple flavor blast. It worked out beautifully.

I had some slices left over so I turned them into breakfast the next day. I’m on a low carb diet so I heated up a couple of slices and set poached eggs on top with a slice of cheese. So much better than the plain sausage patties I normally have for breakfast. A smoked fatty has become a breakfast staple for me. I can smoke one on a Sunday and have two slices per morning for five days.
Plus a smoked fatty always makes great great conversation at work when someone asks what I did over the weekend. I always get some strange looks and comments when I say something like, “ I mowed the yard and smoked a fatty.” Fun times.
When I am using the Pit Barrel Cooker on a Sunday or any day for that matter I typically have enough fire left after the main cook for a fatty. I try to keep a roll of sausage in the fridge to take advantage of the fire. I eat them most often for breakfast but they also make a great appetizer for any meal. I also have an idea to crumble one up in some Queso for a special occasion. I’ll let you know how it turns out when I make it.
I need to experiment with smoked fatties more often. Besides being so tasty there are so many things you can do with them. Flatten out the log and add some cheese and veggies and roll them back up. Try different flavors of sausage and bacon. Different rubs etc.
